Coffee & Portuguese rice muffins (by Loua)
Bolo de Arroz
● 300 g sugar
● 150 g butter
● zest of 1 lemon
● 6 eggs
● sufficient milk to make 1/2 litre with the eggs
● 300 g wheat flour
● 150 g rice flour
● 25 g baking powderMix sugar, butter, and lemon zest. Beat very well, until the mixture becomes light and fluffy.
Add milk to the beaten egg to makes more or less 1/2 litre and stir into the butter and sugar mixture, then add flours and baking powder. Put spoonfuls of the mixture into muffin tins lined with paper and bake in medium oven, until you think they are cooked
